Basic Menu
All basic menus will offer one entrée selection, a salad selection, freshly
baked rolls and butter, and coffee with appropriate condiments. For Chicken
entrée selections the menu will also include a starch selection and a hot
vegetable selection. For menus with a pasta selection as the entrée the menu
will include two hot vegetable selections.
Chicken Entrée Selections
Chicken Marsala: Boneless, skinless breast of chicken simmered in Marsala
wine with fresh herbs and mushrooms.
Chicken in White Wine with Capers combines tender boneless, skinless breast
of chicken with a light white wine cream sauce, capers and a kiss of garlic.
Sweet and Sour Apricot chicken combines tender boneless and skinless chicken
breasts with the sweetness of apricots and the savory flavors of sesame, soy and
fresh ginger to create a wonderfully different entrée experience.
Chicken Teriyaki is a taste of the orient that combines grilled boneless and
skinless chicken breasts with our own teriyaki sauce made with fresh ginger and
topped with roasted sesame seeds.
Chicken Picatta pairs boneless and skinless breast of chicken which is
pounded thin and then sautéed with white wine, capers, butter and fresh lemon.
Chicken Parmesan is prepared with boneless and skinless breast of chicken
pounded thin then breaded with Italian breadcrumbs and grilled. When it is
golden and tender it is bathed in a savory marinara and topped with mozzarella
and Parmesan.
Pasta Entrée Selections
Lasagna, the traditional favorite, made with five cheeses and fresh marinara
and filled with beef, grilled chicken or vegetables.
Fettuccini Alfredo made with white wine and cream tossed with Parmesan cheese
and spices, tender pasta and either grilled fresh vegetables or grilled boneless
breast of chicken.
Tender Penne pasta and grilled breast of chicken tossed with a creamy Pesto
sauce and julienne strips of sun-dried tomato.
Bowtie pasta tossed with spicy marinated grilled chicken breast, sun-dried
tomatoes, olives and fresh basil in a light chicken broth with roasted garlic
and fresh herbs.
A pasta bar offering Penne and Rainbow Rotelli pasta with our own meat sauce
and a creamy Alfredo Prima Vera to mix in any combination that guests would
like.
A basic menu with one choice from the pasta or chicken entrée selections is
$18.95 +++ per guest
Addition of a second entrée choice from the same selections plus $2.50 +++
per guest
Veal Entrée Selections
Veal loin stuffed with sun-dried tomatoes, fresh mushrooms, shallots and
fresh herbs then oven roasted until it is perfectly done.
Veal Parmesan or Marsala prepared with medallions of veal loin, pounded thin
and sautéed with butter and either Marsala wine and fresh mushrooms or a spicy
fresh tomato sauce and Parmesan and mozzarella cheeses.

Pork Entrée Selections
Roast loin of pork with savory herbs and spices served with a pink peppercorn
sauce
Tenderloin of pork roasted until tender inside and crispy on the outside then
sliced for service with a creamy tarragon sauce

Beef Entrée Selections and Carving Station Up-Grades
Beef Burgundy prepared with tender Top Sirloin, which has been simmered with
sweet onions, fresh mushrooms and red wine.
Carving Station Presentation offering your choice of roasted beef carved to
order by our staff in a crisp chefs white coat and offered with creamed
horseradish and au jus, Bordelaise or Marsala and fresh mushroom sauce.

Beef Entrée Up-Graded Selections
Savory Prime Ribs of beef oven roasted until done ton perfection and carved to
order with creamed horseradish and au jus
The basic menu including Prime Ribs of beef in an up-graded carving station
is $28.95+++ per guest
Beef Wellington prepared in the traditional manner wrapping tender Filet
Mignon (tenderloin) in fresh mushroom paste and then enrobing it in puff pastry
then roasted until the pastry is golden brown and the beef is done just right.
Presented with a red wine Demi-glaze

Fish and Seafood Entrée Selections
Grilled Mahi-Mahi topped with teriyaki and toasted sesame seeds
Baked Halibut topped with fresh tomatoes, shallots and fresh basil
Savory Salmon poached or grilled and topped with lemon-caper butter or fresh
herb butter.
Seafood Brochette combines sweet scallops, shrimp and tender white fish on a
skewer with fresh sweet bell peppers and onions, laced with bacon and presented
with a lemon-dill sauce
Jumbo Shrimp sautéed Scampi style in butter and white wine with garlic and
